Honey glazed ham, baked in a pastry case

Boil the ham with about 1/2lb. dried figs and 3 bay leaves. Remove the skin and crisscross incisions, which you fill with honey. Next make a paste of flour and oil (1 lb. flour and enough oil to make a manageable pastry). Roll out pastry and cover ham. Bake in the oven, remove pastry when it is cooked and serve the ham as it is.

Sauce for hot honey glazed ham

Pepper, lovage, parsley, welsh onion (or spring onion), toasted almonds, dates, honey, vinegar, liquamen, defrutum and oil. Chop onions and dates, mix with other ingredients, heat gently and pour over ham slices.
