Roast duck with damson sauce

Roasting the duck

You give a bird a greater flavour and make it more nourishing and keep all the fat in, if you wrap it in pastry make of oil and flour and cook it in the oven.

Damson sauce

Take pepper, dried onion, lovage, cumin, celery seed, stoned damsons, mulsum, vinegar, liquamen, defrutum and oil. Cook together until damsons are tender. Strain
