Bread Salad

1 lb loaf fine white bread
3 t mild vinegar
1 c water
1 c mild cheese, shredded

Dressing:
dash of pepper
1 t honey
1/2 t mint
clove of garlic, crushed
1/4 t coriander
1 c olive oil
2 T mild white wine vinegar

Remove the crust from the loaf of bread, slice, and moisten it with vinagar and water. Cover a shallow salad bowl with pieces of the prepared bread. On top of it, sprinkle shredded cheese. Chill

To make dressing, combine the pepper, honey, mint, garlic, coriander, olive oil and vinegar. Pour over the chilled bread and serve at once.
